Snow "White" Mushroom Soup (Serves 4)
Ingredients:
3 Tbsp Ghee
1 Container Root 54 Farms Snow Mushrooms, remove stems and cut in to 1/4" strips
1/2 Cup Onion, finely diced
2 cloves Garlic, minced
3 Tbsp All-Purpose Flour
2 cups Chicken Broth (or vegetable broth)
3/4 cup Heavy Whipping Cream
1 tsp GOURMET ALL-PURPOSE SEASONING SALT
½ tsp Dried Thyme (or 1 tsp fresh)
Instructions:
Sauté Snow Mushrooms
Melt Ghee in a medium pot over medium heat.
Add Snow Mushrooms and cook 4-6 minutes, stirring occasionally
Add Aromatics
Stir in Onion and GOURMET ALL-PURPOSE SEASONING SALT and cook 3–4 minutes until soft.
Add Garlic and cook 30 more seconds.
Make Roux
Sprinkle flour over the mixture and stir constantly for 1–2 minutes (this thickens the soup).
Add Chicken Broth
Slowly pour in Chicken Broth, stirring to prevent lumps.
Bring to a gentle simmer and cook 8–10 minutes until slightly thickened.
Finish with Heavy Whipping Cream
Stir in Heavy Whipping Cream and Thyme.
Simmer gently 5 more minutes (don’t boil).
